Recipes I Can’t Stop Making (online edition)

If you follow me on Instagram, you know that I often share recipes I really love in my stories. Since Instagram stories are just temporary, however, I’m going to start sharing some on here too. 

Once a month I’ll post links to the recipes I can’t stop making. (This is inspired by one of my favorite blogs Modern Mrs Darcy. In addition to talking about books, Anne Bogel also shares links she loves, some book related, some not. I love this idea, but for me it will be all food related stuff!).

My Instagram followers will recognize some of these recipes for sure, because I can’t stop talking about them. Now they’ll all be here in one spot where you can easily access them.

And so, here is this month’s edition of Recipes I Can’t Stop Making:

Hetty McKinnon’s Sesame Tofu with Broccoli

Until I tried this recipe, I didn’t think I liked tofu. I mean, I would happily eat it in hot and sour soup, but my few experiences eating it in take-out meals (like Pad Thai) left me thinking it was just not for me. I know. I can just see all of the tofu lovers out there shaking their head. I am shaking my head at my past self too. I’m now a tofu lover too, and I owe it all to this recipe. And also, as a child, I loved sesame chicken at our local Chinese restaurant, so I guess I shouldn’t be surprised that I love this dish so much. (And for the record, Hetty McKinnon’s version is far better than that mediocre sesame chicken I grew up with). Although the recipe just uses broccoli, as you can see in the above photo, I sometimes use other veggies too. It’s amazing either way.

Pinch of Yum’s Vegetarian Meatballs

I’ve been making these a lot lately. I like them because I can easily prep them ahead of time, which is perfect for the days when I take my toddlers out to a park or on a hike. Plus I almost always have leftover brown rice in the fridge and cauliflower that needs to be used, so I don’t have to remember to put any special items on my grocery list. They’re great right out of the oven, but I love them with the Life Changing Masala Sauce. Have I had better masala sauces? Yes, but I love this one because, once again, I can prep it ahead of time and put it in my freezer for a quick dinner. I just recommending adding more spices and using even more of the masala paste than what is recommended in the recipe.

Sally’s Baking Addiction’s Apple Cinnamon Bread

Sally’s Baking Addiction is one of my go-to baking blogs. She never steers me wrong. I’ve made this twice this fall, and it is so good. For anyone else out there who thinks pumpkin is overrated, this is the apple bread you didn’t know you were waiting for. But listen to Sally when she says to wait until it cools to slice it. I couldn’t wait the first time and it fell apart. Still delicious? Yes, but, if you can, let it cool first.
